Ingredients
  

  • 4 Large bell peppers Any color
  • 1 cup Cottage cheese
  • 2 cup Fresh spinach chopped
  • 0.5 cup Grated Parmesan cheese
  • 2 Cloves garlic minced
  • 1 Tablespoon Olive oil
  • Salt and black pepper
  • 1 Tablespoon fresh parsley chopped (for garnish)

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  • Sauté the Spinach: In a skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted (about 2-3 minutes). Remove from heat.
  • Mix the Filling: In a mixing bowl, combine the cottage cheese, cooked spinach, grated Parmesan cheese, salt, and black pepper. Mix well until all ingredients are combined.
  • Stuff the Peppers: Spoon the cottage cheese mixture into each bell pepper, filling them generously.
  • Bake: Place the stuffed peppers in a baking dish. Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is heated through.
  • Serve: Remove from the oven, garnish with fresh parsley, and serve warm.
