Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Prepare the Chicken: Season the chicken thighs with salt, pepper, thyme, and paprika.
  • Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown (about 5-7 minutes). Flip and sear the other side for another 5 minutes. Remove the chicken and set aside.
  • Sauté Aromatics: In the same skillet, add the diced onion and cook until translucent (about 3-4 minutes). Add garlic and sauté for another minute until fragrant.
  • Make the Gravy: Sprinkle flour over the onions and garlic, stirring well to combine. Gradually whisk in the chicken broth and milk, ensuring no lumps remain. Let the mixture simmer and thicken (about 5-10 minutes).
  • Cook the Chicken in Gravy: Return the chicken to the skillet, spooning some gravy over the top. Reduce the heat to low, cover, and simmer for about 30 minutes or until the chicken is fully cooked (internal temperature of 165°F).
  • Serve: Garnish with fresh parsley if desired, and serve hot over mashed potatoes or biscuits.

Notes

  • You can use chicken breast instead of thighs for a leaner option.
  • For a richer flavor, consider adding a splash of white wine to the gravy.
